It's important to understand the huge difference between old Solera Sherry casks and the new industrial "Sherry" casks seasoned for a short period of time(normally 12-18 months) with local wines not fit to become Sherries in the first place. For a wine from Jerez to become a Sherry it must be aged for at least 3 years, but in general those used for the new "Sherry" casks are not fit for consumption, they were downgraded after their fermentation for various reasons to be used for Vinagre de Jerez or to be distilled into brandy. So these new "Sherry" casks will never be able to give the same really interesting flavorful aspect to your spirit as the old Solera Sherry casks, which were actually used for up to 200 years to mature the finest Sherry wines. These rare old Solera Casks are the Rolls-Royce of Sherry casks and mostly reused inside the bodegas to age brandy or Vinagre de Jerez when they have ended their long life of aging the finest Sherries.
The young wines used today have never been transferred from cask to cask in the solera system to gain strength before the creation of new Sherry casks!
We can simply put this way, if you do not like the wine in the Sherry cask, don't buy the cask as it can do more harm than good to your spirit. Imagine you spend years of aging your whisky in these casks only to be able to write Sherry Cask on your labels, knowing the result is in no way close to the fantastic result from an old original Solera cask.
Yes the old Solera casks are rare and yes they cost more money, because you can't buy time, however in our opinion there is another way around this. You fill new oak casks in Jerez with really good 4-7 year old Sherry wine of your likings and age the casks for 2-3 years in the bodega. That process is done by sending a small camera "snake" also know as endoscop inside the cask to ensure they are real Solera cask and the layers of old wine residue is present, something which are not there unless they have been used in the Solera system for at least 30+ years.
There are many types of Sherry wines and therefore many types of Sherry casks of which some of them are certified by the official Consejo Regulador and OECCA. The certification process was created due to the fact there are many kinds of new seasoned “Sherry type” wine casks in all sizes found in Spain, but they aren't actually Sherry casks despite the coopers trying to sell them as such. Yes, it’s kind of the same grape types used to season, but there are no control processes in place regarding the quality of wine used for all these “Sherry type" casks outside Jerez, so you don’t truly know what you will get for your money. Even the certification program in Jerez is sometimes questionable as its based on auto-control, meaning that the coopers just have to certify what they did. None of the regulatory bodies are actually making an independent control of these casks before they are getting shipped to you.
Auto-control fraud happened for 10 years at this Spanish Whisky distillery where a famous Spanish cask producers is a major shareholder.
Finally there are the worst kinds of Sherry casks which have turned up in the market due to huge demand worldwide for Sherry casks, these are original old Sherry butts, but they have been shipped back from Scotland after their usefulness has eroded from aging whisky for many years. This warning is why we recommend that you take advantage of our cask program. Aging the casks for at least a year or two longer than the required minimum time for new Sherry casks. Choosing your favorite Sherry and cask size will give you full control and insure the best result for your whisky. In the end that's what matters. Maximizing the flavor profile of your golden spirit.
